I admit it, I am getting impatient and wrapped the currently cooking pork shoulder in foil to power through the stall. That said, in my experience, capturing that moisture and encouraging it to reabsorb into the meat is wise anyway. 🐷🔥

@cleverdevil The Texas crutch only refers to using foil for brisket. No judgement on using it for a pork shoulder!
