I can’t find any of the privacy / terms for YouTube TV on the subject. Will they sell my personal data or viewing habits to advertisers or third parties?

I mean, that's my assumption too. All of the privacy links on the YouTube TV site simply point to the generic Google privacy policy, which isn't useful. That said, Google's chat support vehemently denied that they do.

My understanding is it is the same as YouTube. Under the hood, it is YouTube really. Data is managed in the same place.

Yeah, and they happily sell plenty of personal data and tracking information on YouTube, so I am guessing that they do on YouTube TV as well.

I don't have a firm answer but I'd assume so. I also assume other cable providers do via their boxes too. Akin to some ISPs offering a discount for permission to do so via DNS lookup.

Define “sell”. Ad personalization on YTTV is the same as other Google services, including search and YT. That said, you can turn it off. You’ll still see ads, just not based on your habits.

As far as I’ve researched (and I’ve written plenty on Google+privacy) they don’t using YTTV viewing habits but do use other signals to influence ads there.

Yeah, I just want to see their policies clearly spelled out somewhere. Its a shame that their website is so inscrutable. The fact that its intertwined with other Google services really bothers me, too.
